Cruise Line Job Types List Types of Employment

The Galley (Kitchen)

On a ship the kitchen is called the Galley. On a cruise ship it is one of the largest areas unseen by passengers. The Galley onboard many ships actually consists of several separate Galleys. Some of the smaller dining rooms such as the Pizzeria, Sports Bar, and Crew have their own Galley. The Main Galley is responsible for breakfast, lunch, and dinner and never stops working. Below are a number of positions available within this department.

Dishwasher/Pot Cleaner (Salary $700-$800 US dollars per month)
Responsible for the cleaning and storage of all galley/onboard clients dishes, cutlery, pot and pans. No previous experience required for this position but basic English is generally requested. Potential promotion opportunities to other on-board positions can be achieved from this position.

Cleaner (Salary $700- $800 US dollars per month)
Responsible for various cleaning duties within the galley department. No previous experience required for this position. Basic English vocabulary is generally sought by employers. Potential promotion opportunities to other on-board positions could be achieved from this position.

Crew Messman (Salary $700-$1000 US dollars per month)
Under the supervision of the First Cook you would perform various tasks such as cleaning and routine hygiene maintenance of various equipment. No previous experience required for this position and a minimum standard of English is generally accepted. Good chance of transferring to other departments on-board from this position.

Crew Cook (Salary $800-$1000 US dollars per month)
Under the supervision of the First Cook you would be responsible for the preparation and cooking for the working crew on-board the vessel. Employers generally look for previous restaurant or hotel experience and a basic standard of English. Promotion to the position of Second or Third Cook would be realistic depending on performance.

Trainee Cook (Salary $800-$1100)
Under the supervision of the First Cook you would be responsible for various aspects of the preparation and cooking of foods for on-board guests. Previous hotel or restaurant experience essential with a basic knowledge of English. Promotion to the position of Second or Third Cook would be realistic depending on performance.

Assistant Provision Storekeeper (Salary $1200-$1600 US dollars per month)
Under control of the Provisions Storekeeper you would be responsible for ordering, ensuring safe containment, packaging and distribution of all food supplies coming on-board the vessel. Previous experience within a similar role or within the food and drink industry an advantage if applying for such a position. Verbal communications are vital within this role so good English is required by potential employers. Promotion to the position of Provision Storekeeper would be realistic depending on performance.

Pastry Trainee (Salary $900-$1300 US dollars per month)
Responsible to provide assistance to the Pastry Chef Supervisor. General duties focusing on the organisation and cooking of all pastry products. Employers generally look for previous restaurant experience and a basic grasp of English. Promotion to the position of Pastry Man would be realistic depending on performance.

Provision Storekeeper (Salary $1300-$1800 US dollars per month)
Taking overall control of the ordering, ensuring safe containment, packaging and distribution of all food supplies coming on-board the vessel. Previous experience within a similar role or within the food and drink industry essential if applying for such a position. Accountancy skills also desirable by the employer. Verbal communications are vital within this role so good English is required.

Baker Trainee (Salary $900-$1300 US dollars per month)
Responsible for providing assistance to the bakery supervisor. General duties focusing on the organisation and cooking of all bakery products. Employers generally look for previous restaurant experience and a basic grasp of English. Promotion to the position of Baker would be realistic depending on performance.

Baker (Salary $1200-$1700 US dollars per month)
Responsible for providing assistance to the bakery supervisor and to show direction to the bakery trainees. Duties all focus on the organisation and cooking of all bakery products. Employers generally look for at least 2 years previous restaurant or hotel experience and a good grasp of English as post will require verbal communication skills. Promotion to the position of Assistant Baker Supervisor would be realistic depending on performance.

Assistant Baker Supervisor (Salary $1600-$1900)
Under direction of the bakery supervisor you will be responsible for supervising all working relationships between trainees and bakers. Employers generally request at least 3 years hotel or restaurant experience and a good grasp of English as verbal communications are crucial within this position on-board. Promotion to the position of Baker Supervisor would be realistic depending on performance.

Baker Supervisor (Salary $1800-$2200 US dollars per month)
Responsible for the bakery department and all relationships within. Ultimate control for the organisation and cooking of all bakery products. Extensive cooking and managerial experience required for this position (4 years +). Good English is required as verbal communications are crucial within this position on-board.

Pastry Man/Woman (Salary $1200-$1700 US dollars per month)
Responsible to provide assistance to the Pastry Chef Supervisor. You will show direction to the pastry trainees. Duties all focus on the organisation and cooking of all pastry products. Employers generally look for at least 2 years previous restaurant or hotel experience and a good grasp of English as post will require verbal communication skills. Promotion to the position of Pastry Chef Supervisor would be realistic depending on performance.

Pastry Chef Supervisor (Salary $1800-$2500 US dollars per month)
Responsible for the pastry department and all relationships within. Ultimate control for the organisation and cooking of all pastry products. Extensive cooking and managerial experience required for this position (4 years +). Good English is required as verbal communications are crucial for this position on-board.

Second Cook & Third Cook (Salary $1300-$1700 US dollars per month)
Under the supervision for the First cook you would oversee the preparation and cooking of foods along with co-ordinating the final provision from bakers, pastry cooks and general maintenance requirements. 2 years + hotel or restaurant experience required for this position along with a good grasp of English. Promotion to the First Cook would be realistic depending on performance.

First Cook (Salary $1900-$2200 US dollars per month)
Responsible for the supervision of second cook reporting to the executive chef. Ensuring the preparation and cooking of foods along with assistance to co-ordinate the final provision from bakers, pastry cooks. 4 years + hotel or restaurant experience required for this position along with a good grasp of English. Promotion to the Assistant Executive Chef would be realistic depending on performance.

Assistant Executive Chef (Salary $3400-$4500 US dollars per month)
Reporting directly to the Executive Chef you will be responsible for the quality output of the Galley department and the operational performance of the staff. 5 years + experience within a similar role including a professional catering certificate is generally required by employers for this position. In addition a good standard of English is crucial to operate within this position. Promotion to the Executive Chef would be realistic depending on performance.

Executive Chef (Salary $4000-$5500 US dollars per month)
Undertaking the full control of all operations and staff within the galley department. 10 years + experience within a similar role including a professional catering certificate is generally required by employers for this position. In addition a good standard of English is crucial to operate within this position.
